Korean pork soup comforts with plenty of spice and pork richness.

Halmae Bossam. The gamjatang served in this suburban strip mall, at a restaurant with exterior signage almost entirely in Korean script, is heavy with wonderful meat, luscious and slightly spiced. There are just a few potatoes in each bowl; on top are sprinkled chopped chives and a mix of ground black pepper and perilla seeds. This gamjatang is pretty much all about the meat, and in this bowl, there's likely more meat than would traditionally have been found in home versions of this peasant soup.
